Erjingtiao chili is a renowned Chinese chilli variety originating from Sichuan province, widely celebrated for its exceptional aroma and balanced heat. It is the traditional choice for authentic Sichuan chilli oil, hot pot bases, and Pixian broad bean paste.

Features

  • Shape: Long, slender, and slightly curved, resembling a slender horn or thin crescent. Pods typically measure 12–18 cm in length.

  • Color: Fresh ripe fruits are bright, vivid red with a glossy surface. When dried, the skin turns a deep, rich crimson.

  • Heat Level: Mild to medium spiciness, approximately 10,000–15,000 SHU. The heat is gentle, slow‑building.

  • Aroma: Its most prized feature – a distinctive, complex aroma with smoky, floral, and slightly fruity notes. When fried in oil, it releases an irresistible fragrance that defines Sichuan cuisine.

Erjingtiao chili is highly suitable for making Sichuan cuisine, hot pot seasonings and chili sauces. In Malaysia, it is often used to make sambal sauce.
